I recently went on a trip to Rincón, Puerto Rico where I had my fair share of local fish tacos. They seemed to be everywhere from the beach bar to the food trucks all the way to the nicer dining locations. My favorite variety was at a local hotspot known as La Cambija. Known for it’s watermelon mojito and a fantastic fish taco – it did not disappoint!
After getting back to Boston, post-vacation blues set in and I decided to recreate the fish taco as best I could. Since the Boston weather is heating up, there is nothing I want to do less after a long day at work than spend hours in the kitchen. This recipe was simple, light, and perfect for a quick weeknight meal! Enjoy!

To end the night, we ate these while watching the sunset on the deck in the North End – went great with a glass of sauvignon blanc!
